Casks of Lindores Bourbon - 49.4%

The first “Casks of Lindores” bottling featured exclusively bourbon barrels, one of the three core cask types used at Lindores, and was limited to 11,000 bottles. 

Packaged in the distinctive Lindores bottle and livery with colour specific base labels these bottlings are bottled at the distillery without chill filtration and at our Lindores bottling strength of 49.4%. We believe that the Lindores spirit goes extremely well with bourbon casks and helps showcase its early maturing characteristic. The very long wash fermentation period in our Douglas fir washbacks, coupled with our “Sister Spirit stills distillation” helps create a spirit that matures early but we also believe will continue to develop over time.

Tasting notes

Appearance: Burnished gold, forms a thin line which beads before very slowly falling as thin, oily legs.

Nose: Tart green apple, stewed Bramleys, vanilla, zingy lemon zest, all butter croissants and sharp peppery spice.

Palate: Soft and creamy entrance followed by sharp black pepper. Vanilla, stewed orchard fruits, caramel and a little honey come through as the spice loses some of the heat. With water, Demerara sugar and mocha notes emerge.

Finish: Long and lingering, especially with a few drops of water. Stewed orchard fruit, vanilla custard pastries and mocha, together with sharp peppery heat.

Overall: This is a whisky which bears strong similarities to the core range 1494, but with noticeably more spice. Taken neat it runs a little too hot for me, but with the addition of a few drops of water something more far refined and elegant emerges. Delicious notes of mocha and custard desserts are no longer masked by the sharp pepperiness, bringing a whole new dimension to the whisky.

The current retail price of £69 means it’s not a small outlay, but it does bring bang for the buck. However, of the three Casks of Lindores offerings currently available, my own preference would have to be the toned down Christmas notes of the Sherry Cask.
