Distillery notes:
Filey Bay is the first single malt whisky made in, and of, Yorkshire. Why 'of Yorkshire'? Because it's created by us from field to bottle, here on the coast.
All our barley is grown here in Hunmanby, on our family farm, and we get our water from two sources, sunk deep into the chalk. We're in control of every stage of the growing and distilling process, from choosing the variety of barley and how it is grown, right through to bottling ourselves at the distillery.
Grown, brewed and distilled by us. This release explores the possibilities of our unique position as farmers, brewers and distillers. Alongside Wold Top Brewery, our sister company, we’ve finished our light and fruity single malt in ex-IPA casks, creating something completely unusual, distinctive and absolutely delicious.
Tasting notes: Light, fruity and biscuity with notes of green apple, pear drops, lemon cake and hops.
Tasting Notes:
Appearance: Pale straw colour, forms an inverted crown which beads before quickly falling as thick legs.
Nose: Noticeably hoppy with green apples, shortbread biscuits, pear, lemon curd, vanilla, caramel and a hint of icing sugar.
Palate: Malted milk biscuits followed by green apples, lemon zest, vanilla, pear drops and just a touch of pepper.
Finish: A burst of citrusy hops and a slightly grassy note, finally more of the maltiness comes through.
Notes on the IPA : Light, refreshing, with just enough citrus hoppiness to make it a great summer beer. Just don’t forget it’s 9.1%
Summary: For me, this offered a real step up from the Flagship expression. The addition of the maltiness and, in particular, the citrus hoppy notes added layers of complexity to the light, fruity Filey Bay spirit producing a more rounded whisky.
Priced at £60 it isn’t cheap but it’s certainly one worth looking out for.
