Belonging to our Cask Expressions Collection, our Bourbon Cask Single Malt Whisky is created from select first-fill ex-Bourbon barrels in which our rich and fruity single malt spirit has been patiently matured. These premium American oak barrels are ideal for ageing whisky and impart delicious notes of vanilla and honey. This sweet and malty cask strength expression is a whisky for purists and a wonderful expression of our distillery character.

Non-chill filtered. Natural colouring.

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

Water: Village water supply - filtered, softened and demineralised before use.

Wood: Premium first-fill ex-Bourbon barrels from Kentucky, made from American white oak (Quercus alba).

Tasting notes:

Appearance: The colour of an oak aged Chardonnay, forms a thin line which beads before falling slowly as thin, oily legs

Nose: Green apples, malted milk biscuits, honey, vanilla and a touch of lemongrass

Palate: Creamy mouthfeel. Sweet, creamy vanilla, coconut, white chocolate shortbread, cinnamon, crystallised ginger and white pepper. Water brings a touch more fruit but little else.

Finish: Medium length. Heather honey, shortbread, pepper and a touch of oaky astringency

Overall: The lovely cream mouthfeel helps make this is a really easy drinker despite the elevated abv. The typical fruitiness of the Cotswolds spirit marries beautifully with vanilla and honey notes of the ex-bourbon cask. For me it feels a little overpriced at £76 but nonetheless there is a lot to like about this one.
