The first whisky ever made in the Cotswolds, our award-winning Cotswolds Signature Single Malt Whisky is crafted using the finest locally grown, traditionally floor-malted Cotswold barley. Belonging to our Classics Collection, our Signature Single Malt favours the rich and bold, fruity notes which result from maturation in our highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques. Blended with whisky matured in premium first-fill ex-Bourbon barrels.
Non-chill filtered. Natural colouring.
Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds
Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours
Water: Village water supply - filtered, softened and demineralised before use
Wood: STR (Shaved, Toasted and Re-charred) American oak ex-red wine casks and premium first-fill ex-Bourbon barrels
Tasting notes:
Appearance: Burnished gold in colour, forms a thick line which beads before falling slowly as thick, oily legs
Nose: Red berries, soft vanilla, creamy caramel toffee, heather honey, a hint of Galia melon and a touch of cinnamon
Palate: Creamy mouthfeel. Red berry coulis, vanilla ice cream, runny honey, mango, subtle malt and black pepper
Finish: Long, lingering and mildly tannic, with honey, ginger, cinnamon and a little woody oak
Overall: A lovely fruity dram with the red wine cask bringing all those red berries to the party. An easy sipper with an enjoyable, refined sweetness and a richness to the mouthfeel. Current price is around £46, which for me represents great value and well worth trying.
