We’re delighted to welcome our most distinguished festive guest back to Bimber once again!
This year, Santa returned to our London distillery ahead of his busiest season, joining our team for a day of nosing, tasting and cask selection. Together, we have selected the perfect Christmas cask - an exceptional Pedro Ximénez Sherry Cask.

Tasting notes:
Appearance: Amber gold in colour, forms a thin line which beads before eventually falling as thick, oily legs
Nose: Dark chocolate enrobed orange peel, dark berried fruit, Medjool dates, candied peel, Tamarind, black liquorice, old leather, nutty oak, and subtle ashy smoke particularly when rubbed into the back of the hand
Palate: Thick, juicy and slightly drying with a noticeable prickle. Green & Black’s Ginger Dark Chocolate, Seville orange marmalade, rich dried fruit, and a very subtle hint of smoke. With a little water, chocolate caramels, dark roast coffee and a hint of tobacco leaf appear
Finish: Long, lingering and mildly astringent. Nutty oak, dark chocolate, toasted walnuts, black liquorice, tobacco leaf, cinnamon and crystallised ginger. Water reduces the spice and astringency allowing more a Mocha note to appear
Overall: Bimber is still a relatively young distillery but they certainly manage to pack the flavour into their whiskies. As you might expect from a whisky called Santa’s Edition it’s a hefty Christmas cake of a dram, filled to the rafters with so many of those flavours you would associate with the festive season. It’s rich, luxuriant and very pleasantly warming. Water may soften it a little, but I’m more than happy drinking this one neat.
Price at launch is a very reasonable £79, limited to 338 bottles and I’ve no doubt there will be a rush to grab this one.
