Whilst the distillery’s story is still being written, the advent of our first age-statement release is a turning point in our ongoing legacy and represents the culmination of years of passion, craftsmanship and dedication to the art of whisky-making.
 
This 8 year old single cask single malt is a testament to our dedication to traditional methods. It embodies the true spirit of Bimber - fruit-forward, complex and deeply satisfying.
 
Matured in a single American oak ex-Bourbon cask, this London single malt whisky has spent eight years maturing in our warehouse, developing a remarkably mature and refined character.

Tasting notes

Appearance: Old gold, forms a thin line which beads before falling as thick, oily legs

Nose: Tropical pineapple, runny honey, warm treacle tart with vanilla ice cream, apricot jam, and a touch of pine needles, Baking spices and ginger 

Palate: Milk chocolate coated honeycomb, ginger sponge, peppery spice
A few drops of water bring creaminess vanilla ice cream, together with notes of pineapple and nectarine

Finish: Long and lingering, cinnamon rolls and a touch of cooling menthol

Overall: For an 8 year old whisky this is surprisingly complex, with plenty to keep the palate interested. really enjoyable. Fine neat, water brings out extra tropical fruit notes

The only issue for me is the price, this is a whisky which currently retails around the £160 mark, which seems on the high side for an 8 year old whisky…even a single cask edition. However, Bimber has a dedicated following and this sold out very quickly on it’s release, so there were more than enough people happy to part with that sort of money for the first age statement whisky from the distillery.
