From the bottler

The Whisky Cellar is an Edinburgh-based independent Scotch Whisky bottler, selecting casks from its private stock at the peak of their character.

Bottled a parcel of several single casks at a time, each individual series under our ‘Private Cellars Selection’ label is studiously chosen to deliver a wide spectrum of natural colour, aroma and flavour.

We purchased a parcel of first-fill Sherry butts from Miltonduff and broke the spirit down into smaller Sherry hogsheads and Quarter Casks to accelerate the development of the whisky. This is a result of that re-racking: a single Quarter Cask bottled exclusively for The Whisky Castle in Tomintoul. Expect all the big, bold, richly sweet character from first-fill Oloroso Sherry ramped up by this extended period resting in the smaller cask.

Cask #3017, only 159 bottles.

Tasting Notes:

Appearance: Copper gold, forms a thin line which beads before falling as slow, thin legs.

Nose: A cornucopia of dried fruit, figs, dates, raisins and sultanas, stewed orchard fruit, Demerara sugar and coffee beans.

Palate: Rum soaked raisins and sultanas, tropical fruit, hazelnut coffee and dark toffee whilst cinnamon and nutmeg provide spice. Water reduces the complexity and adds astringency.

Finish: Slightly drying tannic oak, nutty light roast coffee with cream, brandy snap biscuits.

Summary: Another great expression from The Whisky Cellar, full of rich fruit and creamy coffee with everything dialled up to 11. More on the savoury side than sweet, despite the high abv the addition of water isn’t necessary and lessened the enjoyment for me.  A beautiful sherry bomb of a malt, one of those whiskies that really deserves quiet contemplation by an open fire. 

This has been produced as an exclusive bottling for The Whisky Castle in Tomintoul, priced at £70 and only 159 bottles available. Great value and sure to be snapped up very quickly.
