The Single Cask Collection from Duncan Taylor Scotch Whisky Limited is an outstanding range of single malt and single grain whiskies from across the length and breadth of Scotland. 

Bottled from single casks at cask strength, these unique whiskies are a testament to diversity and influence of individual casks, offering unrepeatable expressions from both renowned and lesser known distilleries. Neither chill filtered nor artificially coloured, only the finest whiskies are selected for inclusion in the Single Cask Collection ensuring that each release delivers the multi-dimensional character of the distillery. 

Distilled in August 2008 and then bottled in December 2021. This Glenallachie yielded 501 bottles from Sherry Cask #30900794.

Tasting Notes:

Appearance: Honey gold, forms a thin line which beads before falling as slow, thin legs.

Nose: Honeycomb cinder toffee, raisins, sultanas, caramel and a hint of spice. Water brings out more chocolate, toffee and citrus notes.

Palate: Creamy mouthfeel, baking spice quickly dissipates to reveal dried fruit and dark chocolate. Water reduces the creaminess and spice whilst bringing a little more fruit and chocolate.

Finish: Malt, honey, orange and warm cinnamon spice. Water brings tannic astringency.

Summary: Offering plenty of sherry character without venturing into sherry bomb territory, this is a really enjoyable single cask Glenallachie. Rich, creamy and very drinkable despite being at cask strength. For me it’s one of those whiskies which is better without water, whilst the increased milk chocolate note is welcome the corresponding loss of some of that creaminess in the mouthfeel reduces the overall experience.
